<strong style="box-sizing: border-box;">Modo de preparo da bata cremosa</strong>Cozinhe as batatas com casca, depois de cozidas, deixe esfriar um pouquinho, mas não muito tempo (ideal é fazer com elas ainda quente). Descasque e esmague com um garfo, tempere com sal e pimenta do reino. Com as mãos faça pequenas porções (tipo bolinho) e recheie com o queijo. Passe na farinha de trigo, depois no ovo e por último nas amêndoas trituradas ou laminadas, leve à fritadeira até dourar.</div>

O chef se interessou pela gastronomia devido à curiosidade em aprender coisas novas para cozinhar em casa. O início foi cedo, aos 13 anos Vanderlei Becker trabalhava de steward, em um hotel em Canela, lavando louça e montando café da manhã.</div>

Mais tarde, trabalhou na pousada Quinta dos Marquês, em Canela, como auxiliar do chef Guilherme Sperry, com quem trabalhou posteriormente no hotel Mercure, em Gramado. Foi lá que Becker ganhou todas as promoções possíveis. Após a troca de bandeira do estabelecimento, o chef foi em busca de novos desafios. Se aperfeiçoou com cursos e oficinas gastronômicas e eventos particulares. Antes de chegar ao Laghetto Siena, Vanderlei passou ainda pelos hotéis Ritta Höppner e Serra Nevada, pelo restaurante Domus Mea e também esteve à frente da cozinha do Saint Andrews.<br />
Sua especialidade é a gastronomia contemporânea, gostando de cozinhar peixes, legumes e cordeiro. Com 36 anos, Becker pretende dar sequência e seguir trabalhando na rede Laghetto, mantendo a humildade e o respeito aos colegas, ensinando e ajudando na formação de novos cozinheiros.</div>

900- Gramas de farinha de trigo.<br />
1 - lata de cerveja<br />
300- ml de água<br />
3- ovos<br />
20- gramas de fermento<br />
05- gramas de açúcar<br />
05- gramas de sal<br />

Preparo:<br />

Em uma tigela grande ou bacia, adicione todos os ingredientes sendo que por ultimo a cerveja e a água,<br />
misture bem, bata a massa na tigela, Detalhe a massa fica bem mole.<br />
<br />
Deixe descansar por uma hora.<br />
<br />
Em uma bancada ou mesa polvilhe farinha de trigo, tire a massa aos pouco misturando mais farinha de trigo, amasse e modele como uma bola até que não grude mais nas mãos, faça as bolas de massas e deixe descansar por 30 mn.<br />
Com um rolo abra a massa até que fique bem fina.<br />
Modele a massa e leve ao forno para pre assar.<br />
Depois de pré assado é só colocar os recheios levar ao forno por poucos minutos e se deliciar.<br />

100 gr- cogumelos frescos<br />
100 gr- queijo gruyere<br />

Preparo:<br />

Corte a berinjela em rodelas, tempere com sal e pimenta, passe na farinha de trigo e grelhe dos dois lados, (reserve).<br />

Numa frigideira refogue uma cebola e um dente de alho picados adicione os tomates sem pele e sem sementes, refogue por três minutos, (reserve).<br />

Em um frigideira dore os cogumelos com azeite de oliva tempere com sal, pimenta e manjericão.<br />
<br />
Em uma forma coloque as berinjelas por camadas recheadas com os cogumelos por ultimo o molho de tomate e o queijo, leve para gratinar por 10 mn.<br />
